I made a big pot of jambalaya this weekend, but this picture is from a couple of years ago, when I also made a big pot of jambalaya. (I've made a number of big pots of jambalaya in the intervening years.)

I'm no great Creole chef, but I (usually) do a pretty good job with this recipe from Emeril's website.

(Sorry for the lack of thought-provoking posts lately. Work has been busy, and I've had little time at home for quiet and thinking. Until I get some down time, I'll keep boring y'all with pictures without comment, and random quotes from the internet.)
